A friend brought this dish with her to a party a week ago and I liked it so much that I asked for the recipe. I changed it just slightly and made it with non-sugar sweeteners. This makes an amazingly good Thanksgiving or Christmas appetizer or party tray.
A group of us got together Saturday afternoon at Thai Chili Gardens on 800 N. in Orem for and early dinner. The food, of course, was awesome. My favorite dish there is their massaman curry – probably the best I’ve ever had. We also ordered some vegitarian spring rolls and some Thai BBQ calimari. All good. Kristen ordered some sticky rice and peanut sauce but she didn’t really like the peanut sauce that well. Apparently there is another restaurant near by that has a better peanut sauce – can’t please everyone it looks like. Despite the apparently sub-par peanut sauce, we all had a good time.

On Tuesday this week, I went to my sister’s place for dinner with my family up in Park City, UT. It was my birthday and we had a great time being together and eating dinner. My sister fixed a low-carb pumpkin cheesecake. I asked her for the recipe and she pointed me to this blog entry where she got it.
I’ve been eating a low carb diet for a couple years now and I am constantly on the lookout for good food that is low in high-impact carbs. I decided that I wanted to make some muffins and looking around, I saw that I had some Bob’s Red Mill 10-grain Cereal mix with a recipe on the side for muffins. I replaced some of the ingredience and this is what I came up with. Since the 10-grain cereal is not entirely low-carb, these are “lower-carb” muffins.
